Valerie’s Cranberry Walnut Salad

Ingredients

DRESSING
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon cider vinegar
  • 2 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 1 teaspoon shallots, minced
  • 1 teaspoon garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 cup olive oil

SALAD
  • Salad greens to serve 8 (about 2 bags mesclun mix)
  • 1 cup lightly toasted chopped walnuts
  • 1 cup dried cranberries

Preparation

Wash and dry salad greens, and place them in a salad bowl. In a bowl, whisk together vinegar, maple syrup, soy sauce, shallots, garlic, and Dijon mustard. Just before serving, whisk olive oil into dressing until consistency thickens. Toss salad greens with dressing and top with toasted walnuts and dried cranberries.
